This vegan chocolate chip chickpea blondies recipes is so good that I ate the entire pan in just 2 days. Opps, but not really because these are surprisingly super healthy as far as a dessert is concerned. Did I mention they are also super quick & easy to make.

Grab your food processor and let’s get baking! The main ingredient in these blondies are chickpeas, hence the title ;). Any chance I can add in some nutritious, fiber & protein filled beans to a recipe I will, see my black bean brownies recipe. We get some healthy fats from peanut butter (get some with no added sugar or salt) and ground flaxseed. I’ll admit after reading How Not to Die I am putting flaxseed in anything I can because it’s just that good for you. No refined sugar as an ingredient in this recipe, we use dates for our sweetness and the added benefit of fiber. The only not so healthy, but the best, ingredient, is the chocolate chips. I use Enjoy Life as they are dairy free, gluten free, nut free and only have 3 ingredients.

My chickpea blondie recipe is almost whole food plant based, as the chocolate chips unfortunately aren’t. But that does mean this treat is packed with healthy, nutrient rich, fiber filled ingredients. If you are gluten free no worries as we don’t use wheat, oats or any grains in this recipe. Honestly it kind of blows my mind that these simple ingredients can taste so dang good, you just have to try for yourself! 

Going with the healthy theme & sticking to whole food plant based as much as we can we don’t use oil in this recipe, and you don’t need it. Nope, not even to spray the pan. Just line your pan with parchment paper, this also saves you on clean up time. Assuming you don’t eat them all in one sitting, no judgements if you do, store the chickpea blondies in an airtight container in the fridge.

Vegan Chocolate Chip Chickpea Blondies

Ingredients

  • 1 tbsp ground flaxseed
  • 3 tbsp plant based milk
  • 1 15oz can chickpeas (garbanzo beans)
  • 4 Medjool dates pitted
  • 1/3 cup peanut butter
  • 1 tsp vanilla extract
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup vegan chocolate chips

Instructions

  1. Preheat oven to 350°.

  2. In a small bowl mix ground flaxseed and plant based milk & let sit a few minutes.

  3. Drain and rinse chickpeas.

  4. Add all ingredients except chocolate chips to a food processor and mix until batter is smooth.

  5. Pulse or fold in 1/3 cup of chocolate chips.

  6. Line a 8x8 pan with a piece of parchment paper.

  7. Spread batter evenly in pan. Sprinkle with 2 tbsp of chocolate chips on top, I like to use the mini's.

  8. Bake for 20-25 minutes or until edges are a tiny bit brown.

  9. Cool pan on a wire rack. Cut into squares to make 16 blondies.

  10. Store covered in fridge for up to 3-5 days.
