Healthy Vegan Zucchini Oatmeal Cookies

A healthy whole food plant based oatmeal cookie recipe free from oil & refined sugar with a added veggie boost of zucchini. 

I am a big fan of sweets and desserts but don’t like using oils and refined sugars. So I adapted a zucchini drop cookie recipe I found in my mom’s zucchini recipe folder. Yes she has a whole folder just for zucchini. If you have a garden with zucchini plants you understand. 

This zucchini recipe is whole food plant based. That means it is vegan, using no eggs, no milk, no butter. As well as refined sugar free and oil free. Instead we use a ground flaxseed, nut butter and date paste as replacements. 

Instead of using sugar in baking I prefer to use dates as a natural sweetener. Dates are not processed and unlike most sugars you are getting fiber and nutrients from this sweet, carmely fruit. Making date paste is as simple; just blend pitted dates with a little water to get a thick mixture. 

Zucchini oatmeal cookies make a great afternoon treat. Need to use up some zucchini but want something sweet, these are perfect. 

My non-vegan family approved of this recipe, even my 6 yr old niece. Dad said they reminded him of christmas cookies. My mom said they taste like date cookies. I agree they were soft & tasty; I ate about 6 after they came out of the oven.

Vegan Zucchini Oatmeal Cookies

Ingredients

  • 1 tbsp ground flaxseed
  • ½ cup almond butter
  • ½ cup date paste
  • 1 tsp vanilla extract
  • 1 cup grated zucchini
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • 1 cup whole wheat flour
  • 1 cup old fashioned oats
  • 1 cup raisins

Instructions

  1. Heat oven to 375°.

  2. In large bowl mix flaxseed and 3 tbsp of water, let set 5-10 minutes until thick consistency.

  3. Mix in almond butter, date paste and vanilla. Fold in zucchini.

  4. Add baking soda, cinnamon, nutmeg, salt, flour and oats.

  5. Fold in raisins.

  6. Drop by teaspoonful on parchment paper lined cookie sheets.

  7. Bake 10-12 minutes.

Recipe Notes

To make date paste blend pitted medjool dates with water in food processor or high speed blender. See this blog post from DetoxInsta as a reference.

These are delicious! I did cut the raisins down by more than half because it’s a dried fruit & I limit it! Thank you so much Emily!!!

Love these, very tasty! Instead of 1 cup raisins I used 1/3 c and added 1/3 c dark chocolate chips. So yummy!
