Skip the prepackaged packets of oatmeal and make your own. It’s simpler than you think and in 10 minutes or less you will be enjoying your breakfast. Making oatmeal is as easy as adding your ingredients to a saucepan and cooking for a few minutes. This chocolate zucchini oatmeal recipe only calls for 5 ingredients! (no crazy ingredients I promise) The recipe is dairy free and vegan.

So why add zucchini to oatmeal? We know vegetables are healthy and offer a variety of vitamins and minerals so the more we can eat the better. If you are making a savory breakfast like a scramble adding veggies is easy but a sweet breakfast not as much. The reason zucchini works well in this oatmeal recipe is that zucchini is mostly water and does not have a strong taste. So you get the added benefit of eating more veggies while enjoying a sweet bowl of oatmeal. Cauliflower or carrots would also work great added in oatmeal as cauliflower has little taste and carrots have a sweet flavor.

This chocolate zucchini recipe is simple to make which leaves room to load up and get creative with the oatmeal toppings. I recommend at the very least topping your oatmeal with some nut butter and berries as this will round out your meal to include a whole grain, vegetable, fruit and healthy fat. For some extra chocolate add some chocolate chips or a healthier option of cocoa nibs. Sprinkle on some of your favorite nut or seeds like coconut, almonds, walnuts, chia seeds, etc. A nut butter gives you creamy and decadent topping; I prefer natural peanut butter but almond butter, cashew butter, sunflower seed butter are all great options. Load up on the fruit! My go to is blueberries or strawberries but banana or apples would also taste great with this recipe.

Chocolate Zucchini Oatmeal

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup zucchini grated
  • 2 tbsp cocoa powder
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 1/4 cup water
  • 1/2 cup berries optional
  • 1 tbsp nut butter optional

Instructions

  1. Grate 1/2 a zucchini to get about 1/2 cup.

  2. In a small saucepan bring the oats, zucchini, cocoa, maple syrup, vanila and water to a boil, this takes about 2 minutes.

  3. Bring heat to low and cook for 5 minutes, stir occasionally. Add more water if consistency is too thick for your preference.

Recipe Notes

You can add more or less maple syrup to your taste.

Top with- berries, nut butter, nuts, coconut, cocoa nibs.
