7 Low Carb Vegan Breakfast Ideas

I love carbs, the good and the bad, but some days I just want to start my day on the lighter side of the carb spectrum and save a boozy toast, pancake, pastry filled breakfast for another day. By no means am I saying that carbs are bad, carbs play an important role in our diet. I believe we should try to avoid white, processed foods all the time. There are lots of healthy foods that we can incorporate into our breakfast that will not overwhelm our carbohydrate intake for the day. 

Here are some low carb vegan breakfast ideas with recipe suggestions:

Chia Seeds

Chia seeds are great because most of the carbs found in them are from fiber. Some other benefits of chia seeds are: high in antioxidants, high in Omega-3 fatty acids, high in calcium and magnesium.

You can incorporate Chia seeds with chia pudding, adding it into smoothies or baked goods.

Muffins

Making pastry such as muffins with almond flour & protein powder will allow you to enjoy a typical breakfast treat but with less carbs than the white flour counterpart.

Fruit

Fruit does have more carbs than vegetables from the natural sugars however as fruit is full of fiber you will not spike your blood sugar. Some lower carb fruits include: watermelon, cantaloupe, honeydew, strawberries, blueberries, and peaches. 

Try a fruit salad, fruit in a smoothie or fruit added to chia pudding or oats. 

Avocado

As you might know avocado is a great source of healthy fat, and fiber which accounts for most of the carbs in avocado. 

Try avocado on low carb toast loaded with veggies or adding avocado to a smoothie. 

Nuts & Seeds

Similar to avocado nuts & seeds are low in carbs but high in fats, protein, fiber and other nutrients. Nut & seed flour can also be used to make bakery items & to make low carb bread. 

Try a nut & seed bar like these chewy granola bars or make your own nut butter. 

Soy

Tempeh and tofu are low in carbs and high in fat and protein. There are many ways to incorporate soy into a low carb breakfast as tofu is often used as an egg substitute.  

Try a tofu scramble like my southwest tofu scrambleswith black beans or tempeh bacon.

Green Smoothies

Making a green smoothie full of low carb veggies is a perfect way to start the day. Not only are spinach, avocado, and cucumbers low in carbs they are a great source of nutrients.
