Chocolate Protein Powder Pancakes

I always like to sneak a little protein powder into my pancakes, I get a little protein & flavor boost. No sneaking protein powder into this recipe though as it is the star. The basis of this pancake recipe is banana and plant based protein powder unlike traditional pancakes which use flour, milk & eggs. Using chocolate protein powder not only provides more protein than flour but a delicious chocolatey flavor without the need for chocolate chips.

My protein powder of choice today was Orgain organic plant based protein powder in chocolate. I also like to incorporate fruit into breakfast, so I use banana in the recipe and top my pancakes with fresh berries. Personally strawberries are my favorite especially with chocolate, It’s like eating chocolate covered strawberries for breakfast – who can argue with that.

Chocolate Protein Powder Pancakes

Ingredients

  • 1 tbsp ground flax seed
  • 3 tbsp water
  • 1 small ripe bannana
  • 1 tbsp cacao powder
  • 1 scoop chocolate Orgain plant based protein powder
  • 1 tbsp non diary milk
  • 1 tbsp peanut butter
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract
  • oil cooking spray
  • 1/2 cup fresh berries
  • maple syrup

Instructions

  1. In a small bowl mix flax seed and water to make flax egg. let sit for 5 minutes or until it gels.

  2. In a medium bowl mash the banana.

  3. Add the non diary milk, cacao powder, protein powder, peanut butter, baking soda, vanilla extract & flax egg; whisk until well combined.

  4. Spray a skillet on medium heat with nonstick spray.

  5. Pour pancake batter onto warm skillet cooking 3-5 minutes on each side.

  6. Serve pancakes with fresh berries and maple syrup. Enjoy!
