Snickerdoodle Chickpea Blondies recipe is a delicious yet healthy dessert. This fudgey recipe is full of flavors like cinnamon and banana and free of oil & heavily processed ingredients. A perfect treat for everyone, including those who eat vegan or gluten free. 

You will want to make these again, trust me. First off this recipe is simple and easy; there are less than 10 common ingredients. Second, these are a healthier option to many desserts. This chickpea blondie recipe has no oils, no flours and minimal sugars. Which leads me to the biggest reason you will be making these again, they taste so good!  They are fudgey and sweet and don’t have any weird bean taste (I promise).  And,  you can make these for your vegan and gluten free friends. 

You will be needing a food processor for the snickerdoodle blondie recipe, this is to evenly blend up the chickpeas and dates to form a smooth batter. This is the food processor I use and it does the trick. You can probably use a high speed blender as well. You will also need parchment paper or foil to line your pan as the recipe is oil free and we don’t want it to stick to the pan; plus this makes for easier clean up in my opinion.

Snickerdoodle Chickpea Blondie Ingredients:

Chickpeas – a great way to add in some fiber and plant based protein in your day.
Banana – the most common and an inexpensive fruit that helps make this recipe fudgey. 
Medjool Dates – these are the dessert of fruit and help add sweetness with added fiber and nutrients.
Almond Butter – make sure to use one with no added oils or sugars, we want just almonds on the ingredient list.
Cinnamon – I mean it is snickerdoodle blondies, cinnamon lovers unite. 
Nutmeg – a pinch of nutmeg for a sweet and nutty flavor. 
Coconut Sugar – what would snickerdoodles be without the cinnamon sugar!
Baking Powder & Baking Soda – necessary for baking, ya know. 

A few tips on making this snickerdoodle chickpea blondies recipe. These are pretty fudgey so make sure they cool completely before cutting them. These will store for a few days but honestly they might not last that long! I stored mine in the refrigerator. If you don’t have chickpeas you can try replacing with another white bean however the taste may differ slightly. If you don’t have banana you could substitute with pumpkin, mashed sweet potato or applesauce; this will definitely change the taste a bit but hopefully in a delicious way!

Vegan Snickerdoodle Chickpea Blondies

Ingredients

  • 1 can chickpeas
  • 1 banana
  • 6 medjool dates pitted
  • 1/3 cup almond butter no added oil or sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda

Topping

  • 2 tbsp coconut sugar
  • 2 tsp cinnamon

Instructions

  1. Preheat oven to 350° & line an 8x8 pan with parchment paper

  2. Add all ingredients except topping into a food processor.

  3. Mix until smooth, scrap sides as needed.

  4. Pour batter into pan and spread evenly.

  5. In a small dish mix sugar & cinnamon. Sprinkle on top of batter.

  6. Bake 22-25 minutes.

  7. Let cool at least 20 minutes before slicing.
