5 Ingredient Healthy No Bake Date Cookie Bars

These chocolate chip date cookie bars are an easy and quick to prepare healthy no-bake dessert with only 5 ingredients.

Date cookie bars are vegan and gluten free as well as a healthier dessert option. No added oils or refined sugars are used in the recipe. We get sweetness from using date paste and natural fat from nut butter.

Dates are a great source of natural sweetness as well as being high in fiber and antioxidants. To make date paste simply blend pitted medjool dates with a little water to form a paste. You can do this with a food processor or high speed blender. 

Date cookie bars are a perfect sweet afternoon treat; decedent little square that has the consistency and taste of cookie dough. I like to use the mini enjoy life chocolate chips in mine. 

Try different date cookie bar flavors:
Cookie dough- Use cashew butter and add in chocolate chips

Birthday Cake- Add in sprinkles instead of chocolate chips
Peanut Butter- Use peanut butter instead of almond butter
Chocolate- Add in cocoa powder
Coconut- Use coconut extract and add in shredded coconut
Snickerdoodle- Add cinnamon and top with cinnamon sugar

Get creative and create your own cookie flavor by switching up the flavor extract, switching the nut butter and adding in different toppings like chocolate chips, sprinkles, coconut, nuts or dried fruit.

I also made these with sprinkles instead of chocolate chips and it reminded me of birthday cake.

No Bake Date Chocolate Chip Cookie Bars (Vegan & Gluten Free)

Ingredients

  • cup Almond Flour
  • ¼ cup Almond Butter
  • 1/3 cup Date Paste
  • 1 tsp Vanilla Extract
  • 3 tbsp Mini Chocolate Chips dairy free

Instructions

  1. In a small bowl mix almond flour, almond butter, date paste and vanilla.

  2. Fold in 2 tbsp of chocolate chips.

  3. Line a loaf pan with a piece of parchment paper and press dough evenly into pan.

  4. Sprinkle top with remaining chocolate chips.

  5. Fold over extra edges of parchment paper and lightly press down on top.

  6. Freeze for 20-30 minutes to set the bars.

  7. Slice into 8 squares. Store in airtight container in fridge.

Recipe Notes

  • I made a batch of date paste by blending a 12oz package of medjool dates (pitts removed) and 1/2 cup of water until a thick paste was formed. For the exact amount needed for the recipe use 1/4 cups of medjool dates and 1-2 tbsp of water.
  • Sub chocolate chips for sprinkles, shredded coconut, dried fruit, etc. to  create different flavors.

Unfortunately this recipe turned out to be really dry and powdery. I subbed coconut flour, which is probably the issue, but it almost feels like theres too much flour.

I love the date slurry idea though and will definitely be using it in other recipes!
