No Bake Date Chocolate Chip Cookie Bars (Vegan & Gluten Free)

Ingredients

  • cup Almond Flour
  • ¼ cup Almond Butter
  • 1/3 cup Date Paste
  • 1 tsp Vanilla Extract
  • 3 tbsp Mini Chocolate Chips dairy free

Instructions

  1. In a small bowl mix almond flour, almond butter, date paste and vanilla.

  2. Fold in 2 tbsp of chocolate chips.

  3. Line a loaf pan with a piece of parchment paper and press dough evenly into pan.

  4. Sprinkle top with remaining chocolate chips.

  5. Fold over extra edges of parchment paper and lightly press down on top.

  6. Freeze for 20-30 minutes to set the bars.

  7. Slice into 8 squares. Store in airtight container in fridge.

Recipe Notes

  • I made a batch of date paste by blending a 12oz package of medjool dates (pitts removed) and 1/2 cup of water until a thick paste was formed. For the exact amount needed for the recipe use 1/4 cups of medjool dates and 1-2 tbsp of water.
  • Sub chocolate chips for sprinkles, shredded coconut, dried fruit, etc. to  create different flavors.
