Vegan Black Bean Brownies

Black beans? In brownies? Sounds crazy right, so crazy that it actually is amazingly delicious. I was a bit suspicious when I came across the idea of black beans in brownies but take my word you can’t even taste them. Don’t believe me, guess you better make them and find out for yourself. I’ve tested this recipe on a non-believer, who isn’t the biggest fan of beans, and he thought they were delicious and fudgey. They were surprised when I revealed the secret ingredient! Trust me you are going to want to make this Vegan Black Bean Brownie Recipe!

This recipe is great because it is easy and uses ingredients you normally have on hand. Thumbs up for it being vegan.

I will note that you will need a food processor to thoroughly blend the beans. It also makes the prep time for them super quick. Just measure, blend, stir, pour, bake and enjoy! I am pretty sure doing the dishes after took longer than making the brownies!

Add all Ingredients except chocolate chips into a food processor

 

Blend until smooth

Black Bean Brownies

Ingredients

  • 1 1/2 cups black beans 1 15 oz can
  • 2 Tbsp cocoa powder
  • 1 cup oats
  • 1/4 tsp salt
  • 1/2 cup agave
  • 1/3 cup coconut oil
  • 2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 2/3 cup vegan chocolate chips optional- more for topping

Instructions

  1. preheat oven to 350 ℉
  2. rinse off black beans
  3. in a food processor add all the ingredients except chocolate chips
  4. blend until completely smooth
  5. stir in chocolate chips
  6. pour into a greased 8x8 pan
  7. sprinkle chocolate chips over the top (optional - but highly recommended)
  8. bake for 15-18 minutes
  9. let cool at least 10 minutes before trying to cut
  10. Enjoy!

Recipe Notes

  • Put brownies in fridge to set if they are difficult to cut
  • Get creative and top with nuts or swirl in peanut butter
  • Maple syrup can be substituted for agave
