Easy Strawberry Mango Salsa

A fresh and easy to make strawberry mango salsa recipe is perfect as a summertime appetizer.

Making salsa from scratch is so easy and super fresh. In about 10 minutes you can easily prepare a healthy fruit filled salsa. It’s as simple as chopping and mixing your ingredients. I love that this salsa uses fresh ingredients and is so vibrant & colorful. As they say eat the rainbow, and with this salsa you are. The sweet flavors of strawberries and mango work well with the fresh lemon juice and herbs and it all comes together on a crunchy chip.

Now you could buy some tortilla chips but making your own is healthier (no oils or excess salt) and easy. To make your own tortilla chips: cut flour or corn tortillas into quarters and bake at 400° for 10 minutes or until golden. So easy, and in 10 minutes not only can you have your salsa made but fresh out of the oven baked chips to go with it.

How to make fruit salsa from scratch

Making your own fresh fruit salsa can be super easy. Just follow my fruit salsa formula.
Fruit + Fruit + Onion + Pepper + Beans + Citrus Juice + Herbs & Spices
The measurements aren’t set in stone but follow my strawberry mango salsa recipe below to guide you. In this recipe we use strawberry & mango but you could use peaches, blueberries, pineapple, kiwi, etc. lots of fruits would work well, I would advise against banana though. This recipe uses red onion but any onion works. Use a chili pepper or try a jalapeno. Throw in some pinto beans, black beans or edamame. Lemon, lime or orange juice help to add some acidity and bright flavor. Use fresh herbs if possible like cilantro; add your favorite spices and flavors like paprika and salt.

Strawberry Mango Salsa

Ingredients

  • 1 ½ cup strawberries diced
  • 1 mango cubed
  • ¼ cup red onion diced
  • 1 anaheim chili pepper or similar chili pepper
  • ¾ cup pinto beans
  • ¼ cup fresh cilantro chopped
  • ½ lemon juiced
  • ¼ tsp red pepper flakes
  • ½ tsp salt

Instructions

  1. Remove stem and dice strawberries, cube a mango, chop fresh cilantro, dice red onion, dice pepper

  2. In a large bowl add all ingredients and mix

  3. If not serving immediately chill in refrigerator
