Vegan Nut Free Oat Balls

I love making dairy-free energy bites and bringing them to picnics to share with friends. This vegan nut free oat balls recipe is inspired by my friend Bri (who is allergic to nuts), I’ve tried to make no-bake energy balls without nuts in the past but did not succeed – who knew coconut was a nut (apparently not me). So now I am determined to make a nut free oatmeal ball recipe that she can enjoy.

I think that oatmeal balls are the perfect healthy snack for lunches. They are pretty easy to make and don’t require anything fancy to create a great treat. aka no need to have a food processor or blender just a good old bowl and wooden spoon. I usually eat these oat balls in the afternoon for a little energy but mostly because they are a yummy yet healthy treat.

This recipe is free from nuts & dairy but is full of flavor! When you bite into these oat balls you get salty and sweet, the best of both worlds. Sweet dried cranberries and chocolate chips; salty sunflower seeds. The main binder in the oat balls is sunflower butter which is rich & creamy leaving you wanting another bite.

If serving to someone who is allergic to nuts be sure your ingredients are truly nut free. I like to use Enjoy Life mini chocolate chips as they are free from many major allergens including nuts and dairy. The mini vs normal sized chocolate chips help the chocolatey goodness be dispersed more evenly throughout your oatmeal balls.

Vegan Nut Free Oat Balls

Servings 20 balls

Ingredients

  • 1 cup oats
  • 3/4 cup sunflower butter
  • 1/4 cup sunflower seed kernels
  • 1/4 cup dried cranberries chopped
  • 1/4 cup mini chocolate chips
  • 1 Tbsp agave or maple syrup
  • 1/4 tsp vanilla extract

Instructions

  1. Roughly chop your dried cranberries

  2. In a medium bowl mix oats, sunflower seeds, cranberries and chocolate chips

  3. Add sunflower butter, agave, vanilla and mixed until evenly combined

  4. Add more oats if too wet to form into balls or add more sunflower butter if too dry to form into balls

  5. Optional: set in fridge for 10 minutes to help firm

  6. Use hands to form into tablespoon sized balls

Store in airtight container in fridge for up to 5 days
