Pumpkin season is upon us. If you you need a pumpkin snack in between your pumpkin spice lattes get you your mixing bowl ready; this Vegan Pumpkin Oatmeal Balls Recipe is for you.

Personally I believe that snacking should be healthy and easy which is why energy balls are my go to snack. Here are a few reasons why-

  • Prepare ahead for snacking all week
  • Store well in fridge or freezer
  • Ingredients are customizable

I take 15 minutes out of my Sunday evening to prep a batch of energy balls for the week, that’s it just 15 minutes (including cleaning up) for a week of healthy & delicious energy balls. Making a healthy snacks shouldn’t be complicated; it should be as easy as 1,2,3 or in this case mix, roll & store. For this recipe you will use many ingredients you have on hand. The major kitchen equipment needed is a bowl and mixing spoon, yay no fuss of cleaning your food processor for a recipe that takes around 10-15 minutes to make. Sorry no playing with the oven today these are no-bake. 

Vegan Pumpkin Oatmeal Balls

These Vegan Pumpkin Oatmeal Balls are super moist and taste like pumpkin pie! The pumpkin is not overpowering but just the right amount. I wanted to keep these healthy so they are not overly sugary but sweet enough that they are delicious. 

Energy balls are the ultimate pre-workout or afternoon snack. They give you a little boost of energy to fuel a workout or get you out of that afternoon slump. When you make them you can put them in baggies or containers so you can easily take them with you to work, school or the gym.

One of the main ingredients in this recipe is pumpkin puree, this is not to be confused with pumpkin pie mix – although this would be super decadent. Pumpkin puree has no added sugar and is 100% pumpkin whereas pumpkin pie mix has added sugar. Who knew snacking on veggies would taste like pie. 

Pumpkin Oatmeal Bites

Pumpkin is a major fall vibe so I knew I had to incorporate it into a batch of my go to bites. I encourage you to play around with the recipe to suit your tastes. If you LOVE pumpkin maybe add extra pumpkin puree or if you want to make more of a sweet treat add in some chocolate chips. 

Energy balls are one of my favorite snacks to make so I hope you enjoy making and eating this pumpkin oatmeal flavor. Vegan Pumpkin Oatmeal Balls

Ingredients

  • 1/2 cup pumpkin puree
  • 1/2 cup oats dry, uncooked
  • 1/2 cup crushed pecans
  • 2 Tbsp Agave Syrup
  • 2 Tbsp Vanilla Protein Powder plant based
  • 1 Tbsp ground flaxseed
  • 1 tsp pumpkin pie spice

Instructions

  1. In a medium bowl add all ingredients and stir well to combine.
  2. In your hands roll a TBSP sized amount into a ball.
  3. Store in the refrigerator for up to a week.

Recipe Notes

  • If mixture is too sticky add more oats
  • Chilling the mixture will make it easier to roll into balls
