Vanilla Raw Vegan Energy Balls are an easy to make raw vegan snack. Perfect little treat for on the go or when you want something sweet.
I love making energy balls; they are a great snack for me to bring to work or for after a beach volleyball game. Better yet, these raw energy balls are full of plant based protein. This past week I was doing a juice / raw vegan week, so I challenged my self to make my favorite treat raw. Usually I use nut butter in my balls however raw nut butter can be pricey. Instead I used medjool dates as the wet ingredient, they work perfect as they are naturally sweet and have a bit of a caramel taste.

Vanilla Raw Vegan Energy Balls
Ingredients
- 1 Cup medjool dates
- 1/2 Cup raw cashews
- 1/2 Cup Raw Vanilla Vegan Protein Powder
- 1 Tsp vanilla extract
- pinch salt
- 1/4 Cup Shredded Cococnut Optional
Instructions

Remote pits from dates.

Add pitted dates, cashews, protein powder, salt and vanilla extract to food processor. Process until blended.

If mixture is to dry to stick together add a splash of water.

Roll into tablespoon sides balls.

(optional) Roll balls into shredded coconut

Refrigerate or freeze in airtight container to store.
Recipe Notes
Use a tablespoon to scoop out dough and roll into ballt - will make 14 Tablespoons sided balls.

FINALLY!!!! A simple, tasty, healthy and VERSATILE vegan energy ball recipe!!!
I added chopped tropical fruit and swopped the cashews for descaled, lemon-dusted almonds, + a splash (maybe 1/4-1/2 teaspoon Cardamon <33) and rolled em in coconut ^-^ SO. EFFIN. DELISH!
