Peanut butter and chocolate are one of the most heavenly pairs. These vegan Peanut Butter Black Bean Brownies will have your taste buds mezmorized. When I take a bite of these I just want to close my eyes and melt away into dessert dreamland. This recipe is based on my black bean brownies. Don’t get turned off by the black beans because these are a decadent treat that taste nothing like the savory bean dishes you’ve had before. When you eat a plant based diet peanut butter is pretty much its own food group so it makes sense to pair peanut butter with brownies to create a killer dessert. I won’t pretend that this is the healthiest recipe; but if i’m getting some extra fiber and protein in the form of a brownie you won’t see me complaining.
These brownies are super easy to make. All you do is add the ingredients to a food processor, blend it up, swirl in some peanut butter and bake. This recipe is vegan as long as dairy free chocolate chips are used. It is also gluten free if you use certified gluten free oats.
Peanut Butter Black Bean Brownies
Ingredients
- 1 can black beans about 1 1/2 cups
- 2 TBSP cocoa powder
- 1 cup Quick Oats gluten free if needed
- 1/3 cup Agave Syrup
- 1/4 cup peanut butter 1/4 cup more for topping
- 1/4 cup coconut oil liquid or melted
- 2 TBSP almond milk
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 cup vegan chocolate chips more for topping (optional)
Instructions

Preheat oven to 350 ℉.

Rinse off black beans.

In a food processor add all the ingredients except chocolate chips.

Blend until completely smooth.

Stir in chocolate chips.

Pour into a greased 8x8 pan.

Spoon globs of peanut butter on top of batter. Use a knife to swirl the peanut butter around.

Sprinkle chocolate chips on top (optional but highly recommended).

Bake for 15-18 minutes.

Let cool at least 10 minutes before cutting.

Recipe Notes
- Store with foil over pan or in an airtight container
- Put brownies in fridge to set if they are difficult to cut
- Maple syrup or honey can be substituted for agave syrup (may slightly alter taste)
- Other milks maybe be substituted for almond milk (soy, cashew, etc.)
- If honey, cows milk or normal chocolate chips are used this recipe will no longer be vegan.
