Peanut Butter Black Bean Brownies

Ingredients

  • 1 can black beans about 1 1/2 cups
  • 2 TBSP cocoa powder
  • 1 cup Quick Oats gluten free if needed
  • 1/3 cup Agave Syrup
  • 1/4 cup peanut butter 1/4 cup more for topping
  • 1/4 cup coconut oil liquid or melted
  • 2 TBSP almond milk
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 cup vegan chocolate chips more for topping (optional)

Instructions

  1. Preheat oven to 350 ℉.
  2. Rinse off black beans.
  3. In a food processor add all the ingredients except chocolate chips.
  4. Blend until completely smooth.
  5. Stir in chocolate chips.
  6. Pour into a greased 8x8 pan.
  7. Spoon globs of peanut butter on top of batter. Use a knife to swirl the peanut butter around.
  8. Sprinkle chocolate chips on top (optional but highly recommended).
  9. Bake for 15-18 minutes.
  10. Let cool at least 10 minutes before cutting.
  11. Enjoy!

Recipe Notes

  • Store with foil over pan or in an airtight container
  • Put brownies in fridge to set if they are difficult to cut
  • Maple syrup or honey can be substituted for agave syrup (may slightly alter taste)
  • Other milks maybe be substituted for almond milk (soy, cashew, etc.)
  • If honey, cows milk or normal chocolate chips are used this recipe will no longer be vegan.
