I can remember making 7 layer bars as a kid. They are super easy to make not to mention delicious. Also who doesn’t love a recipe whose name reflects exactly what it is – 7 layers in a bar. We would bring them to parties or make them for our Sunday Funday as food was always the main event. Being vegan a lot of recipes from my past will never be made again but I am happy to say I have veganized a classic that is sure to please many.
The basic concept of 7 layer bars is to form a crust add layers of nuts, coconut and chocolate chips and top off with sweetened condensed milk then bake. Not eating dairy just led me to get creative with switching out some ingredients. The butter is swapped for earth balance butter, chocolate chips for vegan chocolate chips and the sweetened condensed milk for coconut cream. I feel like I have hit the lotto with discovering coconut cream; this stuff is delicious just alone on a graham cracker. I am excited to use it in future recipes. Vegan 7 layer bars are a decedent treat sure to bring happiness. My fellow sweets lovers this one is for you! You get so many amazing flavors in one bite, chocolate, peanut butter, coconut, and nuttiness atop a buttery crust. I brought these to a cookout and they were gobbled up. The few extra crumbs that remained I sprinkled on banana nice cream for a heavenly late night treat.
You will need a food processor to crumb the graham crackers and chop the nuts. Alternatively you could buy them already crumbed or chopped.

Vegan 7 Layer Bars
Ingredients
- 1 1/2 Cups graham cracker crumbs about 1 sleeve
- 1/2 Cup vegan butter
- 1/2 Cup Pecans chopped
- 1/2 Cup Walnuts chopped
- 1 Cup Shredded Coconut sweetened
- 1 Cup chocolate chips vegan
- 1/2 Cup peanut butter
- 1 Can Coconut Cream 15 oz
Instructions

Preheat oven to 350.

Melt butter in small sauce pan or in microwave.

Stir graham cracker crumbs into melted butter.

In a greased 9x13 pan spread mixture and push with fingers to form into a crust.

Sprinkle one layer at a time, pecans, walnuts, shredded coconut and chocolate chips.

Drizzle peanut butter over top. If peanut butter is too thick heat a few seconds in the microwave until a more liquid consistency.

Open can of coconut cream and mix with a spoons as it may have separated. Pour cream evenly over the top.

Bake in 350 oven for 30-35 minutes until edges are golden brown and center is set.

Cool completely before cutting.

If you use graham crackers one sleeve in a food processor will be roughly 1 1/2 cups.

Made these these the other day and they were so good! Really easy to make, too. Satisfied my sweet tooth without being overly sugary. I’m definitely making these again soon!
