A simple vanilla chia pudding recipe with layers of berry chia pudding – the perfect sweet yet healthy treat.
What’s the Chia Seed Pudding Ratio?
When making chia seed pudding the main thing to remember is the ratio of chia seeds to liquid to result in a pudding consistency. For every 1 cup of liquid you will use 3-4 tablespoons of chia seeds. I suggest 3 tablespoons if you are also mixing in a nut butter or protein powder and 4 tablespoons if you are sticking with no thicker add ins. Of course adjust the ratio to your pudding thickness preference.
Chia pudding is easy to make and this recipe only has 4 ingredients in the base recipe. It’s as simple as mixing the ingredients and you have your base vanilla chia pudding. For our berry layers of chia pudding we will mix in pureed or mashed berries, which consists of one additional ingredient – the berries. Mixing in pureed berries results in a vibrant colored fruity chia pudding. You can puree your berries simply by using a high speed blender or food processor. If you don’t have either of those you can mash the berries by hand.
When serving your chia pudding cups have fun with the toppings. Top with fresh berries, nuts, seeds, coconut flakes, whipped cream, chocolate chips, etc.

Vanilla Berry Chia Pudding
Ingredients
- 1/2 cup chia seeds
- 2 cup unsweetened almond milk
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 cup strawberries
- 1 cup blueberries
Instructions

Add the first four ingredients to a bowl and mix.

Let set in refrigerator 2 hours to overnight.

Mix chia pudding, add a splash of almond milk if too thick.

In a blender or food processor puree strawberries then blueberries (in separate batches)

Separate chia pudding into 3 bowls.

Add strawberry puree to one bowl and mix.

Add blueberry puree to one bowl and mix.

Spoon a little of each chia mixture into 4 cups to create a vanilla layer, strawberry layer and blueberry layer.

Enjoy right away or cover and refrigerate for up to 5 days.
Recipe Notes
Sub your favorite berry for strawberry or blueberry.
You can also puree the berries together to create a mixed berry layer.
