Vanilla Berry Chia Pudding

Ingredients

  • 1/2 cup chia seeds
  • 2 cup unsweetened almond milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 cup strawberries
  • 1 cup blueberries

Instructions

  1. Add the first four ingredients to a bowl and mix.

  2. Let set in refrigerator 2 hours to overnight.

  3. Mix chia pudding, add a splash of almond milk if too thick.

  4. In a blender or food processor puree strawberries then blueberries (in separate batches)

  5. Separate chia pudding into 3 bowls.

  6. Add strawberry puree to one bowl and mix.

  7. Add blueberry puree to one bowl and mix.

  8. Spoon a little of each chia mixture into 4 cups to create a vanilla layer, strawberry layer and blueberry layer.

  9. Enjoy right away or cover and refrigerate for up to 5 days.

Recipe Notes

Sub your favorite berry for strawberry or blueberry.
You can also puree the berries together to create a mixed berry layer.
