Hi friends. I know it has been a minute since I have posted a new recipe. I wanted to share this Lemon Chia Pudding recipe first because it is easy to make, healthy and refreshing. Perfect for these upcoming sunny months! I also love that you only need a few ingredients and can top it with whatever fruit & nuts you have on hand to make it your own! I’m personally not a huge lemon fan but this recipe might have won me over.
How to make Lemon Chia Pudding
Making lemon chia pudding is easy to do and you only need a few ingredients.
Start with a bowl and add in your chia seeds, plant based milk, sweetener and lemon juice + zest.
Mix it all up then let it set in the refrigerator overnight.
Top with fruit, nuts, or even vegan whip cream. Enjoy!

Lemon Chia Pudding Tips
- If your pudding is too thick after it has set, just add a splash of milk and mix it up
- For a decadent dessert lemon chia pudding use canned coconut milk
- Layer with fruit and top with granola for a refreshing parfait
- Not a lemon fan? sub the lemon for an orange

Lemon Chia Pudding
A easy to make 4 ingredient recipe for a refreshing chia seed pudding perfect for a healthy dessert or breakfast.
Ingredients
- 1/4 cup chia seeds
- 1 cup unsweetened plant based milk
- 1/4 cup maple syrup
- 1 lemon
Instructions

In a bowl mix chia seeds, plant based milk, maple syrup.

Stir in zest and juice from 1 lemon.

Cover bowl and set in refrigerator.

After 1-2 hours stir the chia pudding.

Let set overnight.

Mix before serving, if it is too thick add a splash of milk.

Top with fresh fruit, nuts, shredded coconut, etc. as desired.
Recipe Notes
- If you use sweetened milk use less maple syrup

Great recipe! I used a less lemon zest the second time I made it because it was a bit too strong for me the first time.
