A few weeks ago I went camping with my sister and niece. It was the first time I had gone camping being vegan so I was a bit worried that I wouldn’t be able to enjoy any of my old camping favorites. After a bit of planning and grocery shopping teamwork from my sister we had a successfully vegan camping trip.
My biggest tip would be to plan ahead. You know what kind of cooking methods and supplies you are bringing so plan out your meals accordingly. By planning out your meals you will know exactly what to bring, you will waste less & not over pack and you don’t have to stress about what you are cooking and can enjoy the outdoors.
When I went camping we brought a mini gas grill, pie iron, roasting sticks and a metal grate for the fire. You could also bring a single gas burner so you could cook things in frying pan or pot. I personally like to keep things simple when camping as we did not have running water which makes cleanup a tad harder. Having a gas burner opens up the floor for alot of meals that you could typically make at home however think about prep time and ingredients needed; maybe save the fancy recipes for another time.
Here is what I ate on my camping trip:
Breakfast:
Cereal with fruit and almond milk
Toasted bagel with smashed avocado
Lunch:
Hummus with pita, veggies and olives
Veggie dogs & watermelon
Dinner:
Campfire Pies -Pizza with vegan mozz and PB&J
Beyond burger, corn on the cob, foil pack potatoes w/ veggies
Snacks:
Roasted seasoned zucchini slices (we cooked them over the fire on a stick)
Smore’s / Marshmallows (Dandies are amazing!)
Pretzels
Fruit
Don’t forget to pack lots of water!
This is just one example of a meals you could plan for a 2 night camping trip like mine.
Here are some other ideas of food to pack for a camping trip:
Fruits & Veggies are a must! Easily roasted over the fire or for snacking, just pack some homemade hummus or bean dip.
Vegan burgers, hot dogs and sausages are essential camp food that can be cooked on the grill or over the fire.
Sandwiches are perfect for lunch as they can be easily be made ahead of time or at camp. Make a batch of my chickpea salad.
Potatoes. Wrap one up and throw it in the coals for baked potato or chop with veggies & oil and put in a foil packet.
Snacks – trail mix, nuts, energy bars, pretzels, popcorn and chips & salsa. Or make your own Energy Bites.
Pancakes or overnight oats are simple can be topped with nut butters and fresh berries.
Veggie kabobs work great over the fire, you could even add in some marinated tofu.
For a sweet & different treat make sweet potato or banana boats.
If you pack a pot you can always simmer up some soup or veggie chili.
