Stuffed Dates are the perfect snack / dessert when you really want date balls or brownies but just don’t feel like dragging out the food processor. These are minimal effort with maximum (guilt free) indulgence. Did I mention they are easy? Oh and customizable? Jump on the Date Boat train and whip up this delicious little treat.
I have recently started loving dates, how I went so long never having this fruit I will never know. They are rich, sweet and caramely. Dates are perfect to use in various desserts if you want a healthier or whole food plant based sweetener option.
Step 1 – Dates
Take your dates and cut a slit long way on one side. Gently squeeze the ends to open like you would a baked potato. Remove the pit. Adjust the opening as needed so there is room to add a filling.
Step 2 – Fillings
Take a spoon and fill your dates with:
- Peanut Butter
- Almond Butter
- Cashew Butter
- Sunflower Butter
- Tahini
Step 3 – Toppings
Be creative and sprinkle your stuffed dates with:
- shredded coconut
- cacao nibs
- cacao powder
- chocolate chips
- crushed nuts
- seeds
- cinnamon
- dried fruit
- fresh berries
