Its that time of year again, fall or more commonly known as pumpkin everything. I honestly have no complaints on this as pumpkin is a healthy & delicious vegetable; it is nutrient dense (fiber, vitamins, antioxidants & minerals) and low in calories. Also, who doesn’t love walking in a room with a pumpkin scented candle.
As I was searching for the perfect pumpkin pie bar recipe, I just could not find what I wanted. I wanted something simple, no layers or fancy toppings; just a one bowl mix it up and bake. Since I could not find what I wanted I decided to create my own simple, easy vegan pumpkin bars.
Vegan pumpkin bars are meant to eat at any & every time of the day, at least I eat them at all hours. These bars make a great dessert as they taste like a gooey bite of pumpkin pie, but don’t let this stop you from having them as a breakfast treat. I took a few to work and had them as an afternoon snack for a few minutes of a delicious break.
How do you make vegan pumpkin bars?
Making vegan pumpkin bars is very easy. You start with making flax egg (ground flaxseed + water) and letting it sit a few minutes. Then add all the ingredients: flax egg, pumpkin puree (not pumpkin pie filling), flour, agave & spices to a bowl; using an electric hand mixer mix it up. Pour this mixture into a parchment paper lined 8×8 pan; bake for 30 minutes. Mine came out with the very edges a bit more cakey and the center deliciously gooey; if you wanted your bars a bit firmer/ cakey bake a few extra minutes. After you let them cool you can devour them all or share with your friends.

Healthy Vegan Pumpkin Bars
Ingredients
- 2 tbsp ground flaxseed
- 1 3/4 cup pumpkin puree
- 3/4 cup agave syrup
- 1 1/4 cup whole wheat flour
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/8 tsp ground cloves
Instructions

Preheat oven to 375º

In a small bowl mix ground flaxseed with 6 tbsp of water let sit 5-10 minutes or until thickened

In a large bowl add all ingredients (including flax "egg")

Use an electric mixer to mix batter until smooth

Line 8x8 pan with parchment paper, pour batter in pan making sure it is spread evenly

Bake at 375º for 30 minutes

Cool completely before serving
