This Raw Vegan Brownies recipe is perfect for when you want a healthy vegan treat but don’t want to fire up the oven.
You will be surprised at how easy and delicious these raw, no bake, vegan brownies are! Few ingredients are needed to create a chocolatey, oil free, processed sugar free raw vegan dessert.
I was inspired to make these after trying a raw brownie at Chicago Raw which offers a variety of raw food in Chicago. Seeing all the yummy raw options opened my eyes to all the great things that could be created and so I created my own raw decadent treat.
Special Equipment needed:
Food processor
Mixer
Ingredients:
Walnuts
Medjool dates
Cacao Powder
Avocado
Raw agave
Vanilla extract
Salt

Raw Vegan Brownies
Ingredients
- 3/4 cup Walnuts
- 3/4 cup medjool dates pitted
- 9 TBPS cacao powder
- 2 large avocaodos
- 6 TBPS raw agave syrup
- 2 tsp vanilla extract
- 1/4 tsp salt
Instructions

In food processor blend walnuts, dates and 4 TBPS of cacao powder.

In an 8x8 pan put layer of wax or parchment paper.

Take the nut, date mixture and press down evenly in the pan.

In a medium bowl mix the remaining 5 TBSP cacao powder, avocado, agave, vanilla and salt until blended. Best results with an electric mixture as you do not want chucks of avocado.

Spread the mixture on top of the nut/date layer.

Freeze for one hour to set, It should not become completely solid.

Enjoy! Store in the refrigerator covered.
Recipe Notes
You can also use the food processor to mix the cacao / avocado mixture (if you can't find your mixer like me), just ensure there are no chucks and it is smooth.
