Vegan Pecan Pie bars are the best of both worlds Salty & Sweet! You start with a crust of pecans, almond flour and dates. Then is the date caramel sweet & sticky made with medjool dates, maple syrup and a pinch of salt. Top the bars off with pecans for a crunch. A healthy yet decadent dessert recipe perfect to bring to Thanksgiving dinner or parties.

This recipe is perfect to bring to a group setting as it can accommodate a variety of dietary needs.

I am so in love with this recipe. Not only is it made of healthy whole food plant ingredients, it is easy to make and uses simple ingredients that can be found at most grocery stores. Vegan pecan pie bars are easy to make. You don’t even need a bowl! Simply use a food processor to make the crust & filling. Press the crust into a 8×8 pan, spread on the date paste and top with pecans. Let the bars set in the freezer and you have yourself a delicious yet healthy dessert.

Do you need an occasion to make vegan gluten free pecan pie bars? no. But they are perfect to bring to Thanksgiving, Friendsgiving, holiday parties, potlucks or just to make for a yummy late night snack. This treat would be even more elevated topped with some dairy-free whipped topping or vegan vanilla ice cream. Yum.. now I’m getting hungry.

Tips for Vegan GF Pecan Pie Bars

  • If your crust is a little crumbly or not sticking together try adding a few tbsp. of water to help it stick together
  • If your dates are not very soft or not medjool let them sit in hot water for 5-10 minutes before you blend them
  • For a fancier look top with whole pecans and hand place them in neat rows

GF Vegan Pecan Pie Bars (No Bake)

These no-bake bars are easy to make and made with whole food ingredients like dates, pecans and almond flour. This healthy dessert is great for holiday gatherings like Thanksgiving.

Ingredients

  • 10 oz crushed or halfed pecans about 2 1/2 cups
  • 1 cup almond flour
  • ½ tsp salt
  • 16 oz medjool dates pitted
  • 2 tbsp water more as needed
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract

Instructions

  1. In a food processor pulse 1 1/4 cup pecans until in small pieces but not all the way ground. Add in 1 cup almond flour, 1/4 tsp salt, and 8 dates. Process until sticky mixture is formed, you should be able to pinch it together. If it is too dry add 1-2 tbsp. of water.

  2. Line a 8×8 pan with parchment paper. Add in the crust mixture and press evenly in pan using your hands. You can set the pan in the freezer until you need it again.

  3. Rinse out your food processor then add in remainder of dates (about 19), 2 tbsp. of water, 3 tbsp. of maple syrup, 1 tsp vanilla and 1/4 tsp salt. Process until smooth and caramel like. Stop a few times to scrape down sides.

  4. Spread the date caramel evenly over crust. Top with remaining 1 1/4 cups crushed pecans and gently press them into the date caramel.

  5. Let the bars set in the freezer for an hour before slicing.

Recipe Notes

  • You can store these in an airtight container in the refrigerator or freezer
  • I know dates can be hard to measure – I used an entire 20 oz container of medjool dates from ALDI.  8 pitted dates for me were about 137g and the remaining 19 pitted dates were about 286g
