This is the perfect salad to make in the summer. Here in the midwest sweet corn on the cob is in season so you have to take advantage of it when you can. Summer is also when those herb plants are thriving and farmers markets are in full swing. A great way to use fresh cilantro. 

I love the combo of black beans and corn. Black beans are creamy and mild and the fresh corn is sweet and buttrey. Jalapenos give this summery salad a little heat. Crunch from the red onion. And fresh citrusy flavor from the cilantro.

This corn salad recipe is a healthy side option as it uses lots of whole food ingredients like corn, black beans, jalapeno peppers, onion and cilantro. It is also low in fat as it is flavored with fresh lime juice and there is no oil needed. 

The recipe is simple & easy to make. Corn cooks in a short time which means you can have this salad ready in less than 30 minutes. If you have your corn on the cob already cooked perhaps leftover from the weekend cookout; it will save you even more time putting it together.

This vegan summer corn salad is perfect to bring to a picnic or bbq. It also works great prepped ahead and served with a grilled dinner. All I know Is my Dad (meat grilling master) came back for seconds so it must be good!

Cilantro Jalapeno Corn Salad with Black Beans

Ingredients

  • 5 cups fresh sweet corn about 5 ears
  • 1 (15 oz) can black beans
  • 3 jalapeno peppers
  • 1 small red onion
  • 1 bunch fresh cilantro
  • 1 lime
  • 1 tsp chili powder
  • 2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Cook husked sweet corn in boiling water for 5 minutes. Let cool and cut the corn off the cob.

  2. Drain and rinse your black beans and add to a large bowl.

  3. Dice jalapenos, dice or slice your red onion and chop cilantro. Add to bowl.

  4. Add juice of one lime and spices to the bowl.

  5. Toss all ingredients until combined.

  6. Chill until serving.
