Grilled Balsamic Vegetable Kabobs

Looking for a plant based kabob recipe that won’t take all day to make? These grilled balsamic veggie kabobs are simple and easy to make and will go great with your favorite veggie burger. 

Grilled kabobs traditionally have meat on them but let’s not forget the supporting players, the vegetables. Honestly I would go for eating the mushrooms off my kabobs first anyway. For these kabobs we make veggies the star because they deserve a little appreciation too.

How to Grill Veggie Kabobs

This is probably your first question along with how long to grill veggie kabobs and at what temp to grill veggie kabobs. No worries we will figure it out together. The short answer is it will vary on your grill. Generally it will take between 10-25 minutes to cook your vegetables on the grill. If cooking on a medium – high heat start with cooking 10-15 minutes. If grilling on a low heat start with cooking 15-20 minutes. The thickness and spacing of your vegetables on the kabobs will also affect the cook time. The thicker you cut your veggie slices the longer it will take to cook. Make sure when skewering your veggies you do not crowd them so the heat can evenly cook each veggie piece.If you prefer crispier, crunchier veggies I suggest using a medium to high heat. I prefer to use a lower heat for a more low and slow cook which allows more time for our marinade to soak in. A lower heat will help avoid any burning or over charring of your veggie.
The first time you cook veggie kabobs on the grill will help you to learn how long it will take on your specific grill. 

This kabob recipe is a healthier recipe as the marinade does not have any oil in it. Instead we will use vegetable broth so there is no need for calorie dense oils. Hello, veggies are amazing for you, Full of vitamins, minerals, antioxidants and fiber. Basically you’ll want to load your plate up. 

This recipe is pretty simple and easy!

3. Make your marinade
5. Baste & Grill

These veggie kabobs include:
Mushrooms

Tomatoes
Zucchini
Bell Pepper
Onion
Other vegetables to include:
Yellow Squash
Eggplant
Corn
Small Potatoes
Brussels Sprouts

Besides a grill the main tool you need for this recipe are kabob skewers. If you do a lot of grilling or plan to make kabobs more than once I suggest these metal skewers that you can reuse. If you use wooden bamboo skewers make sure you follow the proper instructions to soak in water before using. You will also need a basting brush to coat your kabobs in the marinade.

When should you make these grilled balsamic vegetable kabobs? All summer long! They go great with grilled burgers or hot dogs (vegan or otherwise). Having friends over for a bbq, prep these ahead of time for a healthy and colorful side to your other grilled bbq favorites. 

Balsamic Grilled Vegetable Kabobs

Ingredients

  • 3 bell peppers
  • 1 red onion
  • 10 oz baby bella mushrooms
  • 10 oz grape tomatos
  • 2 zucchini
  • 1/3 cup vegetable broth
  • 1/3 cup balsamic vinegar
  • 2 cloves garlic
  • 2 tsp italian seasoning or oregeno
  • 1 tbsp fresh parsley
  • salt & pepper

Instructions

  1. Wash and cut veggies in large chunks & slice zucchini in 1/2 inch slices. You can leave the mushrooms and tomatoes whole.

  2. Put veggies on skewers, be sure not to overcrowd them. This will make about 10 large skewers. If using wooden skewers make sure to soak them in water for about 30 minutes ahead of time.

  3. In a small bowl mix vegetable broth, balsamic vinegar, pressed or finely chopped garlic, italian seasoning and parsley.

  4. Brush your kabobs with the marinade before putting on the grill.

  5. Grill on low (400°-425°) for about 30 minutes or until desired doneness. Flip and brush with more marinade every 5-10 minutes.

  6. After kabobs are off the grill brush with any remaining marinade. Salt and pepper to your liking.

Recipe Notes

  • Cook time will depend on your grill temperature
  • Makes 10 long kabobs or about 15 smaller kabobs
  • For an extra touch serve with fresh parsley and a squeeze of lemon.
