This Teriyaki Tempeh Poke Bowl is a vegan rice bowl with a sushi twist. A healthy, colorful, veggie filled meal with a delicious teriyaki marinated tempeh.
I know Poke seems like it might be complicated but this bowl is not. Cutting and prepping your ingredients will take the most time as assembling the bowl is easy and fun. Prep extra veggies and have a build your own poke bowl with the family. Or Batch cook some rice & tempeh and chop your veggies to meal prep poke bowls for the week. This recipe uses simple whole ingredients assembled together for a healthy filling meal.
Poke is typically marinated raw fish in a bowl with some sticky rice, kind of like a raw sushi in bowl. To make this recipe vegan friendly we are using baked tempeh in place of raw fish. Be sure to add some seaweed for a true poke flavor, you can use a nori sheet or seaweed salad. I found some seaweed snacks at Trader Joes and they give a great sea flavor without the fish. Like any bowl you can customize and build it to your liking.
Ingredients to use in your poke bowl:
- Base- white rice, brown rice, mixed greens
- Protein- tofu, tempeh
- Ingredients/toppings- cucumber, jalapeno, pineapple, edamame, scallions, avocado, seaweed, carrot, radish, purple cabbage, pickled ginger, pickled radish
- Sauces- wasabi, sesame oil, sesame vinaigrette, spicy mayo, thai mango
- Garnish- nori, sesame seeds
The protein in this bowl is a teriyaki marinated tempeh. You can find my teriyaki and 5 other oil free marinades here. You want to marinade the day before you want to bake your tempeh. The longer you let the tempeh marinade the more flavorful it will be. To bake, evenly space tempeh pieces on a parchment paper lined baking sheet. Bake at 350°, after 10 minutes flip pieces and baste with any extra marinade. Bake 10-15 more minutes or until desired crispness. coat pieces with any extra marinade. The nice thing is that tempeh is already cooked so you only need to bake it long enough for it to get a little crispy. This teriyaki marinated tempeh is so delicious and works amazing in this vegan poke bowl, it would be good in any other asian inspired dishes a well.

Teriyaki Tempeh Poke Bowl
Ingredients
- 8 oz tempeh
- 2 cups brown or white rice cooked
- 4 cups arugula or mixed greens
- 1 avocado
- 1/2 cup red cabbage shredded
- 1/2 cup edamame
- 1/2 cup pineapple chunks
- 1/2 cup radish diced
- 1/2 cup cucumber diced
- 1 sheet nori or a few sheets of seaweed snacks
- sesame seeds optional
- 4 tbsp soy or other sauce
Teriyaki Marinade
- 3 tbsp soy sauce
- 3 tbsp maple syrup
- 1 tbsp rice vinegar
- 1 tsp garlic powder or 1 clove pressed
- 1 tsp ginger or 1/2 inch grated
- 2 tbsp water
Instructions

In a small bowl mix ingredients for the marinade, add 2-4 tbsp of water as needed.

Cut tempeh into bite sized pieces. Put tempeh in airtight container and pour in marinade, coat pieces evenly. Store in fridge and let marinate for at least 2 hours but optimally overnight.

Line a baking sheet with parchment paper and spread out tempeh pieces, they should not touch. Save the remaining marinade. Bake at 350° for 10 minutes. Take out of oven and flip tempeh pieces, baste with extra marinade. Bake 10-15 more minutes until desired crispyness. Baste with any remaining marinade.

Cook rice per package instructions to yield at least 2 cups. This can be done in advance or when meal prepping to save time. I usually use quick cook brown rice which takes about 15 minutes to cook.

While tempeh is baking: chop your cabbage so it is shredded, cut pineapple in small chunks, dice radishes & cucumber, cube avocado, warm edamame if frozen.

Assemble 2 bowls with rice and greens on the bottom, add tempeh and other ingredients. Top with pieces of nori or seaweed snacks and sesame seeds. Top with a few tablespoons of soy or sauce of choice.
