One of my everyday vegan dinners is teriyaki tofu with cauliflower rice. We all have those days where we just want to make something quick, easy and delicious. Here is a simple dinner I have made that takes no time at all to throw together for a speedy yet better than ramen dinner.
For this meal I used:
Trader Joe’s Vegan Soyaki sauce. It is a great marinade or stir fry sauce with fresh ginger, garlic and Sesame seeds. It only cost me $2.99. I recommend you keep this treasure on hand at all times.
Extra Firm Tofu. Tofu is a standard in my fridge as it is so versitile.
Trader Joe’s Riced Cauliflower Stir Fry. This is a great side to have on hand in your freezer as it makes a quick side cooking in about 7 minutes. You can also rice your own cauliflower and freeze it to have on hand for quick meals.
To make:
Drain your tofu and press out excess water. Slice tofu. Spray a cookie sheet with nonstick spray and lay out tofu. With a basting brush cover each piece to tofu in your soyaki sauce. Bake at 350-400 for about 15 minutes. Take tofu out flip each piece and brush with soyaki sauce. Bake an additional 15 minutes or more depending on how crispy you like your tofu. After flipping your tofu you can start to make your cauliflower rice. Heat a skillet with a little bit of oil and cook until warm (see package for complete details). Dish up your cauliflower rice and baked tofu. Drizzle with additional soyaki sauce and sprinkle sesame seeds if desired.
