Vegan Curry Tofu Wrap

Curry Tofu Wrap is a healthy filling meal that is easy to make. Perfect for a summer days where you don’t want to be standing over a hot stove. You get a little spice, a little sweet & a little crunch when you take a bite of this wrap. A healthy yet satisfying meal that I love to eat post workout. It is also super vibrant with greens, red onion and orange curry sauce; as they say eat the rainbow. Oh and this beauty of a wrap is vegan!

Curry Tofu Wrap

The creation of this wrap was inspired by a wrap I had at Left Coast, a hip healthy restaurant with a handful of vegan options. Every time I go there I want to get this, I would literally day dream about getting this wrap. So I said enough of the day dreaming I am making my own and now I leave you with my recipe for Curry Tofu Wrap.

Vegan Tofu Curry Wrap

Prepare your brown rice and baked tofu ahead of time to make this even quicker to prepare. Or make this once with leftover rice and tofu it will only take about 10 minutes to prepare as you tofu and rice is already cooked.

You can find a jar of curry sauce in the ethnic section of the grocery store; below is the one I used.

Ingredients

  • 1 block extra firm tofu
  • 4 whole wheat tortillas
  • 1 cup brown rice (dry)
  • 1 small red onion
  • 1 cup madras curry sauce
  • 2 cups arugula
  • 1/2 cup raisins
  • 1/2 cup sliced almonds

Instructions

  1. Pre-heat oven to 400.
  2. Drain tofu. Cut into 1 inch cubes. Place cubed tofu onto greased baking sheet, leave space in between pieces. Spray tops of tofu with cooking spray. Bake for 15 minutes then flip tofu and bake for another 10-15 minutes.
  3. Follow instructions on package to cook brown rice. Cook about 1 cup dried rice so you have 2 cups cooked rice.
  4. Thinly slice red onion. Rinse arugula.
  5. In a small bowl coat the tofu with the curry sauce.
  6. Lay tortilla flat & add about 1/2 cup cooked brown rice, handful of arugula, sliced red onion, sprinkle of raisins and sliced almonds then topped with curry tofu.
  7. Roll up your wrap tucking one end in to keep things from falling out.
  8. Enjoy!

Recipe Notes

You can use any brown rice however I highly suggest quick cook. I buy minute brown rice which takes about 10-15 minutes to cook.

Save time by having tofu and brown rice already cooked. Just reheat your tofu and brown rice.
