Peanut soba noodle bowls are my go to quick and easy 15 minute weeknight dinners. I often switch up ingredients but here is the basic recipe. This soba noodle bowl is full of veggies and completely vegan; a healthy option that is oil free.
I first started making soba noodles after I read the book How Not to Die and got the accompanying cookbook. The cookbook had a soba noodle recipe which I have made so many times it has evolved to become this recipe. So big shoutout to Dr. Greger who has helped inspire this recipe but more importantly eat more nutritiously. I share here what I ate when I first did Dr. Greger’s daily dozen challenge.
So are soba noodles healthy? I say yes! Try to find soba noodles that are 100% buckwheat and contain no refined flours. Soba noodles have fiber, are a great plant based protein source, contain amino acid lysine and are a low glycemic food. Check out this article from healthline for more info.
Want to make this recipe even easier? When I am feeling a extra lazy or don’t have much produce on hand I will use frozen veggies instead of fresh. I like to keep a bag of stir fry blend veggies which are perfect in this bowl. Frozen vegetables means no chopping.. does it get easier than that?
Didn’t have time to run to the store? If you are looking to use ingredients you have in the pantry or can’t find something at the store check out a few substitution suggestions.
Use frozen peas instead of frozen shelled edamame (I buy mine from Trader Joe’s).
Any vegetables can be substituted with other veggies. Think stir fry veggies like snow peas, cauliflower, onions, or even some greens like bok choy or spinach. Use frozen veggies too.
Use almond butter instead of peanut butter.
Similar noodles can also be used like rice noodles, edamame spaghetti or whole wheat spaghetti. Check the asian section of your grocery store. (just be sure to check the noodle cook time when preparing).
This veggie peanut soba noodle bowl is quick, easy, customizable and delicious. It makes for a great weeknight meal when you are short on time. You can eve make it ahead of time and it it cold for lunch the next day. This recipe is oil free, vegan and buckwheat noodles are a healthier noodle option.
15 Minute Veggie Peanut Soba Noodle Bowl
Ingredients
- 4 oz Soba Noodles
- 2/3 cup frozen edamame or peas
- 1 bell pepper
- 2 carrots
- 4 oz mushrooms
- 1 cup broccoli
- sriracha optional
- scallions optional
- sesame seeds optional
Peanut Sauce
- 2 tbsp natural peanut butter
- 1 tbsp maple syrup
- 1 tbsp soy sauce
- 1 lime
- 1 clove garlic
- 1 inch ginger root
Instructions

Bring water to a boil in a medium saucepan.

Cook soba noodles to package directions (about 3 minutes) adding in the frozen edamame to cook with the noodles.

Drain noodles/edamame and rinse with cold water.

In a frying pan or wok heat a few tbsp of water.

Slice your veggies and saute 5-8 minutes or until desired doneness. If they start to stick add a few more tbsp of water.

In a small bowl whisk peanut butter, maple syrup, soy sauce, juice from lime, minced or pressed garlic, grated ginger. Add 2+ tbsp of water to thin out mixture to desired consistency. Should make about 1/2 cup of sauce.

Divide noodles into 2 bowls, add 1/2 veggies to each bowl, top with sauce. Garnish with drizzle of sriracha, chopped scallions and sesame seeds.
Recipe Notes
- If you keep your peanut butter in fridge or use chunky pb your sauce may be a bit chunky. You can blend your sauce if you prefer a smoother consistency
- You can use frozen veggies instead or in addition to fresh veggies. Be sure to cook long enough (see package instructions)
- You can sub Peanut Butter with Almond Butter
- You can sub ginger powder for fresh ginger use about 1/2 tsp

Great recipe. I made this the other day & enjoyed. I was pretty nervous as I never made anything vegan before and I really didn’t want to mess up dinner. The recipe was really easy to follow.
Totally delicious! I used veggie broth instead of water for sautéing, but otherwise followed your recipe.
