This healthy vegan tofu stuffed zucchini boats recipe is easy to make. It uses 11 simple whole food, plant based ingredients. The recipe is oil free making it low in fat. It is also low in carbs and overall a lower calorie meal.
Try making these vegan friendly zucchini boats for a weeknight dinner. They can be baked or cooked on the grill. It’s a perfect summer recipe to use up those home grown zucchini.

1. saute onions, peppers and tofu
2. cut zucchini and scoop out insides to make boats
3. bake or grill zucchini boats
Vegan Tofu Stuffed Zucchini Boats
Ingredients
- 1 clove garlic diced
- 1/2 cup onion chopped
- 1/2 cup bell pepper chopped
- 1/2 block tofu
- 1/2 tsp cumin
- 1/8 tsp cayenne pepper
- 1/2 tsp black pepper
- 2 tbsp salsa (plus extra for serving)
- 2 medium zucchini (8 inch)
- 2 tbsp nutritional yeast
- fresh cilantro
Instructions

Preheat oven to 400° F.

In a medium non stick frying pan heat 2 tbsp water.

Cook garlic, onions & bell pepper about 3 minutes.

Crumble in tofu then add seasonings & salsa. Add extra 1/4 tsp cayenne for a little kick. Cook about 8-10 minutes.

Slice the stem end off the zucchini and cut in half lengthwise. Using a spoon scoop out the inside to create a bowl shape.

Place the zucchini on a baking sheet and scoop with filling.

Bake 25-30 minutes.

After baking sprinkle with nutritional yeast and fresh cilantro.

Serve with salsa (optional).

- You could also grill your zucchini boats instead of baking them
