I usually don’t eat much “cheese” to me it seems processed and making my own can take awhile. However while I was at a vegan market in Denver, called Nooch, I decided to try out a vegan cheese sauce. It came as a powder and you just added water or plant based milk, it was a mellow cheddar not sharp at all and was absolutely perfect to make nachos with. This was a super quick dinner to throw together, I’m talking 10 minutes! I will surely be adding this meal to my everyday dinners, especially in the summer when I don’t want to heat the oven; I think it would be great to enjoy with friends over as well.
For this meal I used:
Leahey Foods: Cheese Flavored Sauce Mix. This sauce mix is more of a rare product. Instead you can make your own cheese sauce or use Daiya Cheese Sauce.
Tortilla Chips. Any kind will work, so pick your favorite. Personally I like restaurant style and blue corn.
Salsa. Fresh salsa, homemade or from a jar they all do the trick.
Black Beans. For protein, all around delicousness and they are a tex-mex classic.
Onion. For some flavor.
Avocado. Let’s be honest I have like 5 on hand and don’t need an excuse to eat avocado in any meal.
To make:
Prepare your cheese sauce per directions. Lay tortilla chips on a large plate so they are scattered evenly. Drizzle your cheese sauce over the chips, making sure each chip gets some sauce. Spread your salsa, diced onion, black beans and avocado on top. Optional: garnish with fresh cilantro.
