This Thai Salad recipe is inspired by Melt Bar and Grilled’s Awesome Noodle #1 Salad. They are located in the Cleveland, Ohio area – where I grew up. I love Melt; they have great food and an entire vegan menu with countless options for a delicious grilled cheese.. grilled cheese I thought we were making salad. Right, how crazy is it that I am obsessed with this salad at a place known for grilled cheese (and their grilled cheese are amazing). Honestly I never order salad at restaurants but the fresh herbs, sweet candied peanuts and crunchy cabbage just come together for a bomb ass salad. Since moving from Cleveland I have yet to find a restaurant or similar salad that could compare. So here is my take on this amazing, fresh salad.
Now I am not a big salad person, to me lettuce is boring and I crave flavor and excitement. This salad provides exactly that, if you crave a boring iceberg with tomato and cucumber look elsewhere. There are so many flavors and textures in this salad that every bite is an experience. You get the fresh herbs that come alive in your mouth. Crisp cabbage and creamy cubes of avocado. The noodles are fun addition to the spinach base. Candied peanuts give you some sweetness. Dress it with an Asian inspired dressing with fresh garlic or ginger and you will not want to put this salad down.
This recipe is naturally vegan. The only issue may run in to is finding a lo-mein or soba noodle without egg. I found these Blue Dragon Soba Noodles in the Asian section of the supermarket that noted on the package that they were suitable for vegetarians and vegans.

Vegan Thai Noodle salad
Ingredients
- 2 cups spinach
- 1/2 head cabbage
- 2 cups lo mien or soba noodles
- 1 avocado
- 1 cup cherry tomatos
- 1/3 cup fresh mint
- 1/3 cup fresh cilantro
- 1/3 cup fresh basil
- scalions to garnish
- 1 cup candied peanuts to garnish
Instructions

Prepare Soba or Lo mein noodles pre directions on package.

Prepare your veggies. Wash your spinach. Chop your cabbage. Cube avocado. Cut tomatoes in half. Chop herbs. cut scallions.

When noodles are done cooking drain and rinse with cool water.

In a large bowl toss ingredients. Garnish with Scallions and candied peanuts.

Dress your salad with a Peanut Sesame or Sesame Ginger Dressing.
Recipe Notes
The amounts for the herbs are an estimate - use as much or as little as you would like.
Candied peanuts take this salad up a notch but normal roasted peanuts are good too. If you are storing for later leave the peanuts off as they will not sit well in fridge.
