A quick, easy whole food plant based recipe that only takes 5 minutes to prepare! This healthy buffalo chickpea salad recipe is perfect for a simple and yummy lunch.
This vegan recipe is a staple lunch for me. I can make it super quick and customize it with whatever ingredients I have. Try adding in extra veggies like carrots or bell peppers. This time I put my buffalo chickpea salad in little whole wheat pitas then I made it again as a sandwich; it would be great as a wrap too.

Healthy Buffalo Chickpea Salad
Ingredients
- 1 can chickpeas
- 2 stalks celery
- 3 tbsp hummus or tahini
- 3 tbsp Red Hot or other hot sauce
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp paprika
- 1/4 tsp pepper
Instructions

Drain and rinse chickpeas.

In a medium bowl roughly mash the chickpeas.

Add 2 stalks of chopped celery & remaining ingredients. Mix to combine.

Add more hot sauce to taste.
Recipe Notes
Enjoy on a sandwich, wrap, pita, lettuce wrap with some greens and other veggies. Or add to a big bowl of leafy greens for a quick salad.

Made this recipe and loved it! Spicy and crunchy and yummy! I made a couple sandwiches and made just a quick salad with lettuce and leftovers the next day. Will definitely make again.
