Easy to make fluffy dinner rolls with a few minimal ingredients. Vegan friendly and free from oil, butter, eggs & milk.
In a medium bowl add 1 cup flour, salt, sugar, almond butter and yeast.
Warm water to between 120° - 130° F and add to bowl.
With an electric mixer start mixing on low, then mix on medium for 2-3 minutes.
Add in ¼ -½ c of flour until you have a soft dough.
Flour a clean surface & flour your hands and knead the dough for about 5 minutes.
Split dough into 8 equal balls.
Line and 8 inch pan with parchment paper and evenly space your dough balls.
Cover with a towel and leet rest in a warm place for 35-45 minutes.
Optional: Brush rolls with aquafaba before baking
Bake at 375° F for 18-20 minutes.
