Vegan Carrot Pigs in a Blanket are an easy to make appetizer without the meat (or faux meat) perfect for a party, holiday or game day.
Pick out any misshapen or short carrots. In a medium sized sauce pan cover carrots with water.
Boil carrots 10-15 minutes, until tender. Drain.
In a small bowl mix all ingredients (minus crescent rolls & aquafaba).
Add carrots and marinade to a container with lid or resealable bag. Marinade carrots at least 10 hours to overnight in refrigerator.
Heat oven to 375°.
Line 2 baking sheets with parchment paper.
Drain the carrots.
Cut crescent rolls triangles into 3, use your fingers to stretch them out if needed. Roll a carrot in each piece of dough and place on baking sheets about 1-2 inches apart.
Optional: Brush the tops of each carrot in a blanket with aquafaba.
Bake 11-15 minutes or until golden brown.
Let cool 5 minutes, serve with your choice of dipping sauce.
