Vegan Pigs in a Blanket (with Carrots)

Vegan Carrot Pigs in a Blanket are an easy to make appetizer without the meat (or faux meat) perfect for a party, holiday or game day.

Ingredients

  • 48 baby carrots about 2 packages
  • 1 cup vegetable broth low sodium
  • 3 tbsp apple cider vinegar
  • 2 tbsp soy sauce low sodium
  • 2 tbsp maple syrup
  • 1/2 tsp liquid smoke
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp mustard powder
  • 1/4 tsp paprika
  • 2 cans crescent rolls
  • 2 tbsp aquafaba (juice from can of chickpeas) Optional

Instructions

  1. Pick out any misshapen or short carrots. In a medium sized sauce pan cover carrots with water.

  2. Boil carrots 10-15 minutes, until tender. Drain.

  3. In a small bowl mix all ingredients (minus crescent rolls & aquafaba).

  4. Add carrots and marinade to a container with lid or resealable bag. Marinade carrots at least 10 hours to overnight in refrigerator.

  5. Heat oven to 375°.

  6. Line 2 baking sheets with parchment paper.

  7. Drain the carrots.

  8. Cut crescent rolls triangles into 3, use your fingers to stretch them out if needed. Roll a carrot in each piece of dough and place on baking sheets about 1-2 inches apart.

  9. Optional: Brush the tops of each carrot in a blanket with aquafaba.

  10. Bake 11-15 minutes or until golden brown.

  11. Let cool 5 minutes, serve with your choice of dipping sauce.

Recipe Notes

  • If you forgot to marinate the carrots the night before you can boil the carrots in the marinade then let sit in the marinade for as long as possible. They will not be as flavorful as the marinating overnight method. 
  • Best eaten same day as baked
