Cook 1 cup dry quinoa per package instructions, you will get about 4 cups. Let cool.
Rinse sweet potatoes and cut in 1/2 inch cubes. Bake at 400° 25-30 minutes on a cookie sheet lined with parchment paper.
In a large bowl mix cooled quinoa, cooled sweet potatoes, chopped apple, dried cranberries, chopped pecans, chopped kale.
Toss with juice of 2 lemons, Apple Cider Vinegar, salt, pepper, paprika. Adjust seasoning to taste.
Store in airtight container in refrigerator.
