GF Vegan Pecan Pie Bars (No Bake)

These no-bake bars are easy to make and made with whole food ingredients like dates, pecans and almond flour. This healthy dessert is great for holiday gatherings like Thanksgiving.

Ingredients

  • 10 oz crushed or halfed pecans about 2 1/2 cups
  • 1 cup almond flour
  • ½ tsp salt
  • 16 oz medjool dates pitted
  • 2 tbsp water more as needed
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract

Instructions

  1. In a food processor pulse 1 1/4 cup pecans until in small pieces but not all the way ground. Add in 1 cup almond flour, 1/4 tsp salt, and 8 dates. Process until sticky mixture is formed, you should be able to pinch it together. If it is too dry add 1-2 tbsp. of water.

  2. Line a 8x8 pan with parchment paper. Add in the crust mixture and press evenly in pan using your hands. You can set the pan in the freezer until you need it again.

  3. Rinse out your food processor then add in remainder of dates (about 19), 2 tbsp. of water, 3 tbsp. of maple syrup, 1 tsp vanilla and 1/4 tsp salt. Process until smooth and caramel like. Stop a few times to scrape down sides.

  4. Spread the date caramel evenly over crust. Top with remaining 1 1/4 cups crushed pecans and gently press them into the date caramel.

  5. Let the bars set in the freezer for an hour before slicing.

Recipe Notes

  • You can store these in an airtight container in the refrigerator or freezer
  • I know dates can be hard to measure - I used an entire 20 oz container of medjool dates from ALDI.  8 pitted dates for me were about 137g and the remaining 19 pitted dates were about 286g
