Healthy Vegan Pumpkin Bars

Ingredients

  • 2 tbsp ground flaxseed
  • 1 3/4 cup pumpkin puree
  • 3/4 cup agave syrup
  • 1 1/4 cup whole wheat flour
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/8 tsp ground cloves

Instructions

  1. Preheat oven to 375º

  2. In a small bowl mix ground flaxseed with 6 tbsp of water let sit 5-10 minutes or until thickened

  3. In a large bowl add all ingredients (including flax "egg")

  4. Use an electric mixer to mix batter until smooth

  5. Line 8x8 pan with parchment paper, pour batter in pan making sure it is spread evenly

  6. Bake at 375º for 30 minutes

  7. Cool completely before serving
