Vegan Thai Noodle salad

Ingredients

  • 2 cups spinach
  • 1/2 head cabbage
  • 2 cups lo mien or soba noodles
  • 1 avocado
  • 1 cup cherry tomatos
  • 1/3 cup fresh mint
  • 1/3 cup fresh cilantro
  • 1/3 cup fresh basil
  • scalions to garnish
  • 1 cup candied peanuts to garnish

Instructions

  1. Prepare Soba or Lo mein noodles pre directions on package.
  2. Prepare your veggies. Wash your spinach. Chop your cabbage. Cube avocado. Cut tomatoes in half. Chop herbs. cut scallions.
  3. When noodles are done cooking drain and rinse with cool water.
  4. In a large bowl toss ingredients. Garnish with Scallions and candied peanuts.
  5. Dress your salad with a Peanut Sesame or Sesame Ginger Dressing.

Recipe Notes

The amounts for the herbs are an estimate - use as much or as little as you would like.

Candied peanuts take this salad up a notch but normal roasted peanuts are good too. If you are storing for later leave the peanuts off as they will not sit well in fridge.
