Vanilla Raw Vegan Energy Balls

Ingredients

  • 1 Cup medjool dates
  • 1/2 Cup raw cashews
  • 1/2 Cup Raw Vanilla Vegan Protein Powder
  • 1 Tsp vanilla extract
  • pinch salt
  • 1/4 Cup Shredded Cococnut Optional

Instructions

  1. Remote pits from dates.
  2. Add pitted dates, cashews, protein powder, salt and vanilla extract to food processor. Process until blended.
  3. If mixture is to dry to stick together add a splash of water.
  4. Roll into tablespoon sides balls.
  5. (optional) Roll balls into shredded coconut
  6. Refrigerate or freeze in airtight container to store.

Recipe Notes

Use a tablespoon to scoop out dough and roll into ballt - will make 14 Tablespoons sided balls.
