Vanilla Coconut Protein Balls

It doesn’t matter if you call them protein balls or energy bites. These little treats are my all time favorite snack to make and eat. My latest protein ball creation of vanilla coconut protein balls had to be shared. These balls taste of sweet vanilla with a hint of coconut. Rolling the balls in coconut flakes makes them look even more satisfying and adds some texture.  By using vegan protein powder and dairy free milk these balls are vegan. 

I love making protein balls! They are no-bake and take little time to prepare, just mix and roll into balls. I personally would say these are a healthy alternative to cookies; you get some sweetness but also protein and fiber with no processed sugar. Quick check, easy check, yummy check.

We can’t forget how customizable protein balls are, I usually just throw whatever ingredients I have on hand into a bowl and mix up a different creation every time. Feel free to use this recipe as a guide and get creative with the ingredients you have on hand.

In this recipe I use cashews. If your nuts are not pre chopped you can pulse them in a food processor until they are small pieces but not yet a powder.

Vanilla Coconut Protein Balls are great to pack for lunches or perfect to toss in your bag for a snack when your on the go. Store them in ziploc bags or a airtight container and refrigerate for up to a week. I protion them out into 4 of 5 balls a bag as they are so yummy I could eat the entire batch if I wasn’t careful.

Vanilla Coconut Protein Balls

Ingredients

  • 2 scoops Vanilla Protein Powder
  • 1/2 cup Quick Oats
  • 2 TBSP Ground Flax Seed
  • 1/4 cup coconut flakes
  • 1/4 cup raw cashews chopped
  • 1/4 cup Almond Butter
  • 1 TBSP Agave Syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp coconut extract or imitation coconut flavor
  • 4-5 TBSP vanilla almond milk
  • 1/4 cup coconut flakes optional

Instructions

  1. Add all dry ingredients in a medium bowl and mix together.
  2. Add almond butter, agave and flavor extracts. Mix.
  3. Add almond milk one TBSP at a time until you form a mixture that will stick together.
  4. Use your hands to roll into 1 inch balls. If the mixture is too dry and balls are not holding add another TBSP of almond milk.
  5. Optional. Roll balls in coconut flakes.
  6. Store in airtight container or sealed bag. Refrigerate.
  7. Enjoy!

Recipe Notes

  • Agave syrup can be substituted for maple syrup or honey (non-vegan), this will slightly alter the taste.
  • If the mixture is a little dry add a TBSP of milk or add more almond butter
  • If the mixture is too sticky/ wet add more oatmeal
  • Store balls in baggies of 4 for quick grab snack
  • For a more intense coconut flavor add more coconut extract.
